Erythritol occurs naturally in plant-based foods such as fruit. It is produced from plant sugars through a fermentation process. Erythritol is used as a sweetener: its flavour profile is very similar to sucrose, with about 60-70% of its sweetening power, which makes it a useful alternative to traditional sugar; used in combination with intense sweeteners, it can increase the sweetness of ingredients, add body and mask unwanted aftertastes.
Steviol glycosides are natural substances found in the leaf of Stevia rebaudiana, with a sweetening power 300 times greater than that of ordinary table sugar (sucrose). As well as being a particularly interesting sweetener in case of diabetes, stevia is useful as a zero-calorie sweetener in diets aimed at promoting weight loss.
